It works as a salad dressing, a dip for chicken, or a drizzle over roasted vegetables, and it keeps for a week in the fridge. Two kinds of mustard give it depth, while honey rounds off the sharp edges into something genuinely addictive.
Whisk the Dijon, whole-grain mustard, honey, and vinegar until smooth.
Slowly stream in the olive oil, whisking constantly, until the dressing is thick and glossy.
Add salt and pepper to taste, and a splash of water if you want it thinner.
Keep in a sealed jar in the fridge for up to a week.
