View Recipe →This couscous herb salad is fast, fragrant, and endlessly green — fluffy couscous loaded with parsley, mint, and lemon in the spirit of a herb-forward tabbouleh. Couscous steams in five minutes, so this is one of the quickest grain salads you can make, and a mountain of fresh herbs keeps it vivid and light. Serve it alongside grilled meat, roasted vegetables, or a dollop of hummus for an easy Mediterranean spread.
Pour the hot stock over the couscous, cover, and let it sit 5 minutes. Fluff thoroughly with a fork so it stays light.
Spread the couscous on a tray to cool quickly and keep the grains separate.
Whisk the olive oil, lemon zest and juice, cinnamon, salt, and pepper.
Fold in the herbs, tomatoes, and dressing. Taste for lemon and salt, and serve.
