View Recipe →This cucumber avocado salad is cool, creamy, and impossibly fresh — crisp cucumber and buttery avocado tossed with red onion, herbs, and a bright lime dressing. It takes ten minutes, needs no cooking, and works as a light lunch, a taco side, or a partner to grilled fish. The trick is dressing it just before serving so the avocado stays plush and the cucumber keeps its snap.
Slice the cucumbers, salt lightly, and let them sit 5 minutes. Blot off the excess water so the salad stays crisp, not soggy.
Whisk the lime juice, olive oil, jalapeño if using, and a pinch of salt and pepper.
Add the cucumber, avocado, red onion, and cilantro to a bowl. Pour over the dressing and fold gently to keep the avocado intact.
Taste for salt and lime, and serve right away while everything is cold and bright.
