Cucumber Avocado Salad

This cucumber avocado salad is cool, creamy, and impossibly fresh — crisp cucumber and buttery avocado tossed with red onion, herbs, and a bright lime dressing. It takes ten minutes, needs no cooking, and works as a light lunch, a taco side, or a partner to grilled fish. The trick is dressing it just before serving so the avocado stays plush and the cucumber keeps its snap.

Ingredients

  • 2 English cucumbers, sliced
  • 2 ripe avocados, diced
  • 1/4 red onion, finely sliced
  • 1/4 cup chopped cilantro
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1 small jalapeño, minced (optional)
  • Salt and black pepper

Instructions

  1. Salt the cucumber

    Slice the cucumbers, salt lightly, and let them sit 5 minutes. Blot off the excess water so the salad stays crisp, not soggy.

  2. Make the dressing

    Whisk the lime juice, olive oil, jalapeño if using, and a pinch of salt and pepper.

  3. Combine gently

    Add the cucumber, avocado, red onion, and cilantro to a bowl. Pour over the dressing and fold gently to keep the avocado intact.

  4. Serve fresh

    Taste for salt and lime, and serve right away while everything is cold and bright.
